Salmon croquettes are basically a southern version of a salmon cake or salmon patty. It can be fried or baked. Usually, canned salmon is used to make the dish though there are a few recipes that now substitute the tried and true with fresh salmon that has been finely chopped or grounded. A thickener like bread crumbs is also added to help keep the patties together.

Easy and quick to make, deliciously crispy on the outside and flavorful on the inside, serve salmon croquettes with any side dish or even a salad.

Ingredients

  • 14.75 oz canned salmon drained
  • 1/2 small onion diced (Vidalia preferred)
  • 2 scallions finely chopped
  • 1/2 red pepper finely diced
  • 1/2 teaspoon of curry powder or tumeric
  • 1 tsp seasoning salt
  • 1 tsp ground black pepper
  • 1 1/2 tsp garlic powder
  • 1 tsp lemon juice
  • 1/2 cup plain bread crumbs
  • 1 large egg
  • 1/2 cup vegetable oil

Instructions

  • Combine the canned salmon, scallions, diced onions, red pepper, seasoning salt, black pepper, lemon juice, curry powder or tumeric, bread crumbs, and egg into a large mixing bowl.
  • Fold the ingredients until everything is well incorporated.
  • Form the salmon mixture into patties, then set to the side.
  • Pour 1/2 cup of vegetable oil into a skillet, and place it over medium heat.
  • Once the oil is nice and hot, add in a few patties and fry each side until it’s nice and golden brown.
